Over the years, I’ve spent a fair amount of time in NYC restaurants and bars. Not once have I stopped to think about how much ice these establishments must use on a daily basis and how they source it. Check out this neat video from Eater that shows an inside look at one of NYC’s cocktail bars top ice suppliers, Hundredweight Big Ice which is located in the Dutch Kills section of Queens. Company owner Richard Boccato has a long and reputable career in New York’s cocktail bar scene (Little Branch, Milk & Honey, Dutch Kills).
Hundredweight Big Ice specializes in making high-end, hand-cut ice specifically for cocktails. The NYC-based company is owned and operated by bar owner Richard Boccato and produces two-inch cubes, slabs, spheres and more to be shipped to bars across the city.
