What Is American Cheese?

Its plastic, has a slight chemical aftertaste and is hard to beat for melting on top of a burger. What exactly is American cheese though? Its actually more cheesy than I would have guessed (although, still not technically cheese by FDA standards)

Brian Civitello and the Foodnetwork give a rundown on this much maligned staple.

American cheese can be yellow or white and is made by melting down chunks of cheeses such as cheddar, Colby, and/or Swiss with a liquid and an emulsifying agent. The liquid mixture is then molded into bricks or slices and packaged. American cheese can be sold in individually wrapped slices, small, pre-sliced blocks, or sliced off the block at the deli counter.
